The 2021 Odyssey Cabernet Sauvignon is medium crimson with purple hues. This Cabernet Sauvignon greets the wine lover with bright, aromatic notes.
Dark berry fruits such as plum, blackberry, mulberry and cassis abound. There is a backbone of spice adding complexity to the aromatics.
The palate is bright, fresh and vibrant yet full and supple. Flavours of plum, mulberry, cassis and blue fruit are supported by supple, yet defined tannins and quintessential Cabernet Sauvignon structure. Spices, and hints of cedar provide a long lingering finish.
The wine shows great tension, providing an insight to its potential longevity. This is an iconic Cabernet Sauvignon which will continue to grow 15+ years.
Pairs well with slow cooked lamb shoulder or porcini risotto with parmesan.
96 GOLD Points - Halliday Wine Companion 2025 - "Aged for 16 months in French oak. Like peering into a well of black-fruit fantasies.Blackforest cherries, blackberry pie, cassis and pomegranate. Crushed volcanic rock, nigellaseed and chocolate chips. The palate opens and unfurls, showing its many facets over the course of minutes, not seconds. The sappy grape tannins cover the tongue andit's asseductive asit is moreish. This is just stellar winemaking from a beautiful fruit source." - Shanteh Wale 2024

95 Points - Wine Pilot - Tony Love 2025 - "Katnook’s top shelf The Odyssey is a wine with revered provenance and quality – and out of a stellar 2021 vintage this wine is all that and more. While tempting to pick apart its fruit and berry aromas and flavours, this is a wine far greater than a sum of its separate parts, a seamless weave of black fruits, dark mint, subtle cedars and a lifted vinous breath to begin. Once tasted it’s all about the Cabernet berry characters, sappy varietal tannins, mouthwatering dark grapey flavours, and an upright and solid structure, though never heavy or clunky. That’s the trick to its immense pleasures."
