Sparkling yellow gold colour with a wonderfully fine bead. Lifted and exotic aromas reminiscent of white flowers, brown lime juice, lychee, brioche and oyster shell. A seamless and powerful palate with a distinct minerality and complex characters of toasted sourdough, field mushroom, lemon curd and Granny Smith apple. The wine shows great density and an elegant poise, with the low dosage in perfect balance with fine tannins and natural acidity. "This release, a blend of 67/33% chardonnay/pinot noir, is the 16th Arras Grand Vintage. Partially fermented in first-use French oak barriques (10%) followed by 100% mlf; dosage 3.1g/l. Pale straw with an ultra-fine, energetic bead and mousse. Notes of green apple, redcurrant, fresh brioche, white flowers, oyster shell and soft spice. Expansive and pure, with toasty elements floating in on the palate. They're joined by notes of nougat, vanilla bean, roasted nuts and liminal hints of white truffle and stone. Achingly pure, with a taut sense of grace. You get the feeling the French must be looking nervously over their shoulders at the sparkling wines of Tasmania. Beautiful." David Brookes
